table spoon of olive oil into a medium sized saucepan and put
onto a medium heat.
a teaspoon of hing (optional) or you may wish to put in half
a chopped onion instead.
a couple of tablespoons of sunflower seeds and stir round.
for a couple of minutes then add your courgette and peppers
chopped into small pieces. Stir this round for a few minutes
- until the seeds are browning and the courgette and peppers
a tin of tomatoes - the nicer the tomatoes the better the sauce.
a teaspoon of oregano. Add salt and pepper to your taste (half
a teaspoon of each maybe) and also add a teaspoon of sugar.
Stir round and turn up the heat a little.
starts to bubble turn down the heat to low and simmer it for
around 15 mins. Just enough time to make your pasta.
see that after fifteen minutes the courgette is very soft, the
peppers soft, and everything nicely ready to serve.
